  • 1 kg snails (rice snails, apple snails, or black snails)
  • Lien Thanh Red Label Fish Sauce
  • Kumquat juice
  • Sugar, monosodium glutamate, ginger
  • Lemongrass
  • Garlic, chili, lemon leaves, a few slices of kumquat


Step 1: Prepare the snail

  • Soak the snails in water with eggs, chili peppers, or stainless steel for 2-3 hours, then rinse them thoroughly.
  • Crush 2 or 3 stalks of lemongrass and place them in the bottom of a pot. Add the rinsed snails and a few lemon leaves.
  • Steam the snails for 8-10 minutes, or until they are cooked through.

Step 2: Making lemongrass fish sauce

  • In a bowl, combine 3 tablespoons of Lien Thanh Red Label Fish Sauce, 2 tablespoons of kumquat juice, 2 tablespoons of sugar, 5 tablespoons of water, ½ tablespoon of monosodium glutamate (MSG), ½ tablespoon of ginger, lemongrass, chili peppers, and garlic that have been minced.
  • Stir the mixture well until it is well combined.
  • Finally, add a few slices of lime and chopped lemon leaves.
