Recommend dish: Thai-style chicken feet
Ingredients:
- 500g chicken feet
- 200g green mango or 1 mango
- 3 stalks lemongrass
- Lime juice
- Shrimp paste
- Chili powder
- Chili sauce
- Garlic
- Fresh ginger
- Chili pepper
- Lemon leaves
- White wine
- Lien Thanh Red Label Fish Sauce
- Seasonings: sugar, MSG, tamarind juice, chili powder
Instructions:
Step 1: Prepare the chicken feet
- Rinse 500g chicken feet with salt and white wine.
- Remove the chicken’s nails, cut the chicken feet in half, and add them to a pot.
- Add some lemon leaves, 3 stalks of lemongrass, 1 teaspoon of salt, and 1 piece of ginger to the pot.
- Bring the chicken feet to a boil for about 7 minutes.
- When the chicken feet are cooked, remove them from the pot and soak them in cold water to keep them crispy.
Step 2: Make the Thai sauce
- Heat 2 tablespoons of vegetable oil in a wok or large skillet over medium heat.
- Add 5-6 cloves of minced garlic and cook until fragrant and golden brown.
- Add 5 tablespoons of fish sauce, 5 tablespoons of sugar, 2 tablespoons of tamarind juice, 1 tablespoon of lime juice, 1 tablespoon of shrimp paste, 1 tablespoon of chili powder, and 5 tablespoons of water.
- Bring all of the ingredients to a boil, then reduce heat and simmer for 10 minutes, or until the sauce has thickened.
- Season with salt and pepper to taste, then remove from heat and let cool.
Step 3: Mix the chicken sauce with Thai sauce
- Add the cooked chicken feet to a bowl with chopped mango or green mango, lemon leaves, and thinly sliced lemongrass. Chicken feet with mango and lemongrass
- Pour the Thai sauce over the chicken feet and mix well to combine.
- Serve immediately.
Step 4: Serve and enjoy
Arrange the finished chicken feet on a plate and garnish with a few slices of lime and some thinly sliced chili peppers.
